HUDSON – After a devastating fire that completely destroyed the Central Illinois trademark, Green Gables in Hudson intends to rise again.
Green Gables was forced out of business due to the blaze, but because of public support including donations and fundraising, the small town restaurant is anticipated to open again.
Amy Tague, one of the restaurants third-generation owners, planned to restore the Lake Bloomington neighborhood eatery, but shutting down Green Gables was a possibility as well.
“Yeah, it’s definitely crossed our minds a few times. It’s stressful and we didn’t realize how much stress it is running a business until we didn’t have the stress.” said Tague.
“We miss it. It’s been so hard on our family and it is not the same without Gables around. We are bringing it back, and hopefully better than ever.”
The restaurant anticipates hiring upwards of 30 people, many of whom formerly worked at Green Gables before the fire.
Construction is likely to begin next spring.
